Sweet Potato Pie
Ingredients:
9 inch pie shell
Filling:
2 1/2- 3 cups of pureed sweet potato
1/3 cup of condense milk
1/3 cup of granulated white sugar
1 tsp of ground clove
2 tsp of nutmeg
Vanilla essence to taste
A pinch of salt
Coconut sugar - for topping
1 tbsp butter - for pie shell
Directions:
Pie Shell
- Should be refrigerated for 3 hours prior to baking
- Brush the inside of the shell with melted butter
- Boil potatoes until soft
- Add in all ingredients: sugar, milk, clove, essence, and salt
- Using either a wood spoon or hand mixer, mix ingredients until well combined
- Pour pie into unbaked pie shell
- Sprinkle Coconut sugar and nutmeg over the entire pie - optional
Oven:
- Preheat and bake at 350⁰
- Bake pie for 40 minutes.
- Allow to cool before serving.
