Sweet Potato Pie

      The perfect blend of flavour and texture. This sweet potato pie is what you end your day with. Ingredients: 9 inch pie shell  Filling: 2 1/2- 3 cups of pureed sweet potato 1/3 cup of condense milk 1/3 cup of granulated white sugar 1 tsp of ground clove 2 tsp of nutmeg Vanilla essence to taste A pinch of salt Coconut sugar - for topping 1 tbsp butter - for pie shell Directions: Pie Shell Should be refrigerated for 3 hours prior to baking Brush the inside of the shell with melted butter Boil potatoes until soft Add in all ingredients: sugar, milk, clove, essence, and salt Using either a wood spoon or hand mixer, mix ingredients until well combined Pour pie into unbaked pie shell Sprinkle Coconut sugar and nutmeg over the entire pie -  optional Oven: Preheat and bake at 350 ⁰  Bake pie for 40 minutes. Allow to cool before serving.

Bakes, Johnny Cake, fried dumpling or fried bake is one of the many breakfast staples in the Caribbean, especially on Saturday mornings. I had so many weekend mornings waking up to scent of my mom frying bakes and salt fish. So I wanted to share this simple yet so tasty fluffy delight  with everyone to experience it. Even if you try it just once. Ingredients: 3 cups of flour 1 tbsp baking powder 4 tbsp butter 1/3 cup coconut sugar (optional; use any sugar of you choice) Dash of salt 1 cup of water Frying: 2 cups of oil  Directions : Combine flour and baking powder Blend in butter until flour mixture is flaky. Add in sugar, salt and water Knead dough together until it feels like a pillow. Allow the dough rise in a greased bowl for 15 mins or more Cut dough into 12 pieces Each piece should  be rolled into a ball, then pressed out with your fingers into a circle  (does not have to be  perfect circle ) Stove top instructions: Heat oil in frying pan Fry do
