Sweet Potato Pie

      The perfect blend of flavour and texture. This sweet potato pie is what you end your day with. Ingredients: 9 inch pie shell  Filling: 2 1/2- 3 cups of pureed sweet potato 1/3 cup of condense milk 1/3 cup of granulated white sugar 1 tsp of ground clove 2 tsp of nutmeg Vanilla essence to taste A pinch of salt Coconut sugar - for topping 1 tbsp butter - for pie shell Directions: Pie Shell Should be refrigerated for 3 hours prior to baking Brush the inside of the shell with melted butter Boil potatoes until soft Add in all ingredients: sugar, milk, clove, essence, and salt Using either a wood spoon or hand mixer, mix ingredients until well combined Pour pie into unbaked pie shell Sprinkle Coconut sugar and nutmeg over the entire pie -  optional Oven: Preheat and bake at 350 ⁰  Bake pie for 40 minutes. Allow to cool before serving.

New Year, New Me?!...Sure

Every year I believe we all make some sort of resolution that is so far fetched we rarely get through the 1st week of our challenge. Whether it be Intense Juicing, 2hr Daily Gym time, No sugar for 30 days, or it may be as simple as drinking 8 cups of water daily. I am guilty! However, I have learnt new ways to keep my resolutions without completely hating the activity.  I believe it starts with positive thoughts and also really wanting a serious change in that particular area of your life. You need to decide that you actually want this and not jump in because it's currently trending.  Decide what change/addition you need to make in you life eg. Improve Baking Skills Realize how this change will affect your life eg. Improved baking skills will allow me to share a variety of tasty meals for my family and friends.  How can you act on this change/addition eg. 2020 - The year of more sweet bakes

Ultimate Butter Tarts

Another rainy day. Another scrumptious recipe. Today it was butter tarts. I've tasted a few from various places, but homemade is almost always better :) So I fixed my recipe to be not too sweet yet still tasty and mouth watering from the filling to the last bite of pastry. Ingredients: Filling:   1/2 cup butter (melted)  1/2 cup brown sugar  1 egg  2 tsp all spice 1 tsp vinegar  dash of grated nutmeg Chopped dates (optional) Shredded coconut (optional) Tart shell:   ⇛ I used my Tart shell recipe ⇚ But feel free to buy unbaked shells Instructions: Combine all ingredients on one bowl and pour batter into your unbaked shell. Oven instructions : Preheat oven and bake at 350 ยบ Bake for approximately 30 minutes. The batter will rise slightly and will bubble in the last 5-10mins. At  the 30 minute mark I turn off the oven and let the tarts sit for another 5 minutes in the heat. Remove from the oven and let cool.

5 minute Tart Shell Recipe

Firm and sweet but not flaky . Not too soft but has a bit of crunch. This tart shell recipe is everything you need in 5 minutes to whip up a quick dessert. Ingredients:   1 3/4 cup of flour  3/4 cup butter 1 Tsp salt 3/4 cup icing sugar  2 tbsp sliced almonds(optional ) 1 egg yolk Instructions:    In a food processor or by hand mix all the ingredients together until crumby Pour half of the pastry mix into your greased tart tin(9inch) Flatten and shape your crumby mixture into your tin as preferred  Cover with a damp paper towel and freeze for 1 hour, if you have the time  OR Place it in the fridge while you make your pie filling.  Both methods give you  good results  Fill and bake your tart as required.

Peach Tart

Another rainy day, another new creation. Sweet yet tangy and ohh so scrumptious. With a few additional ingredients of your own, this homemade peach tart will fit any occasion. I used fresh peaches for this recipe, however feel free to try it out with canned or frozen peaches. Ingredients: Tart shell(makes 2 shells ): No water required 1 3/4 cup of flour  3/4 cup butter 1 Tsp salt 3/4 cup icing sugar  2 tbsp sliced almonds 1 egg yolk Peach filling: 1 1/2 cup of chopped peach  1/3 cup of granulated sugar 1 1/2 tbsp of corn starch  2 tbsp coconut sugar  1 tsp of cinnamon  Dash of nutmeg  Directions: Tart crust : In a food processor or by hand mix all the ingredients together until crumby Pour half of the pastry mix into your greased tart tin  Flatten and shape your crumby mixture into your tin as preferred  Cover with a damp paper towel and freeze for 1 hour.
